Get ready to blow everyones socks off with this amazing GLUTEN FREE Yorkshire pudding recipe. Yorkshire puddings are a Sunday staple in our house, we’ve been trying for years to make them rise and not turn into rock cakes or muffins with little to no success. Living with someone with coeliacs we’ve had to convert our entire kitchen and lifestyle into a gluten free one. Finding gluten free Yorkshire puddings has not been easy, we were limited to one frozen brand that sell the smallest Yorkshire puddings I’ve ever seen. Last christmas we hosted our entire family of 13 for christmas dinner, with everything from the pigs in blankets to the giant Yorkshire puddings and gravy (thank you ASDA for bringing out your own fresh range of amazing Yorkshires) entirely gluten free with lacto-free and vegetarian alternatives. This year Christmas dinner is probably going to be a much smaller family affair and with people panic buying finding gluten free Yorkshire puddings hasn’t been easy so we thought we’d give it a go ourselves. We found this recipe online from Becky Excell it was the first recipe I found and has worked perfectly every time. I’m not one for measuring everything precisely with scales so I converted the recipe to cups and halved everything as there’s only usually 6 of us on a Sunday. This recipe will happily make 6-8 Yorkshire puddings and only uses 4 ingredients!

For the perfect rise make sure to turn the oven up much higher than you’ll cook at, our (fan) oven only goes up to 225C so I crank it right up when heating up the oil and then turn it down once the mixture is in. Having the oven at exactly 200C is essential for the perfect rise so heating the oven up much higher will help with the heat lost when opening the oven door. With Gluten Free Yorkshires don’t be tempted to add salt, pepper or any herbs (fresh or dried) they don’t rise and I still don’t understand why. To ensure the perfect rise preheat the oil in the oven for 5 minutes and chill the mixture in the fridge. These Yorkshire puddings that 15-20 minutes to cook, DO NOT OPEN THE DOOR until they are fully cooked. I learnt this the hard way, I waited this they rose but weren’t entirely cooked so I could finish them at the end with everything else but they just collapsed. Make them at the beginning when you can guard and be 100% sure no one is going to open the oven door while also praying to the Yorkshire pudding gods that your Yorkshires will rise, not stick to the pan and not have a beautiful crispy bottom.

Gluten Free Yorkshire Pudding Recipe

Ingredients:
  • 1/2 cup of cornflour
  • 1/2 cup of milk
  • 3 medium/large eggs
  • 1-3 tsp oil
  • large muffin tray
Method:
  1. Preheat the oven to 225-250C.
  2. Whisk the flour, milk and eggs in a bowl until the mixture is completely lump free and smooth, chill in fridge until the oven is ready.
  3. Place 1-3 tsp of oil in each muffin hole (enough to cover the bottom of the tray more is better than less) and pop the tray in the preheated oven for 5 minutes until the oil is boiling.
  4. Quickly whisk the tray out of the oven and add the mixture equally, it should make nice hissing noise and start bubbling immediately, if this doesn’t happen your oil isn’t hot enough and needs to go back in the oven.
  5. Place the tray in the oven quickly and reduce the temperature to 200C.
  6. Cook for 15-20 minutes (wait till the tops have browned nicely) and DO NOT OPEN THE OVEN DOOR EVEN FOR A SECOND TO PEEK.
  7. Pray to the Yorkshire pudding gods that everything rises. (optional)
