Eggnog is one of my holiday drinks. Until there is one commercially available, you have to make your own eggnog if you want to be able to sip on that creamy, smooth beverage over the Christmas season. Luckily, it is pretty easy to make and any leftovers that you have can be used to make an eggnog chaffle.

Waffles are a breakfast favorite. Luckily, it’s easy to make them low carb by make chaffle waffles. Chaffles are an easy keto waffle that are made primarily of egg and cheese.

This eggnog chaffle would make the perfect keto breakfast on Christmas morning. Especially when topped with the crème anglaise sauce. Since it’s easy to make, you can focus on spending time with your family in the morning.

Keto Eggnog Chaffle with Eggnog Creme Anglaise Sauce Directions

    Preheat waffle maker

    Preheat waffle maker to medium high heat. Whisk together all of the ingredients for the eggnog chaffle.

  • Pour the batter

    Pour the eggnog chaffle batter into the center of the waffle iron. Close the waffle maker and let cook for 3-5 minutes or until waffle is golden brown and set. If using a mini waffle maker, only pour in one-third the batter.

    Remove and make cream

    Remove chaffle from the waffle maker. For the creme anglaise, whip the whipping cream in a small bowl until it starts to foam. Add egg nog, sweetener, rum extract and nutmeg. Continue whipping until a cream consistency is formed. Pour over chaffles.

  • What is a chaffle?

    Chaffles are a low carb waffle made mostly of egg and cheese. The cheese is either a shredded cheese or cream cheese. In this recipe, we use cream cheese instead of shredded cheese. The cream cheese will provide texture and stability to hold the keto waffle together. Plus it will decrease the egg flavor from the whole egg that is added.

    Waffle maker for keto waffles

    Although any waffle maker can be used to make chaffle, the mini waffle maker by Dash is very popular as it makes the perfect size of chaffle. It will make two to three chaffles for one serving of batter. Dash also has a snowflake waffle maker available which would be perfect for the winter months.

    Another waffle maker I use is my Belgium waffle maker by Oster. I like this waffle maker because it has adjustable heat. The waffle maker gets really hot in order to crisp up the chaffle. Although, with cream cheese waffles, they don’t get crisp. They are more of a sponge like texture.

    Keto eggnog

    Keto eggnog is a sugar free holiday beverage you can sip on over the holiday season. It can be made ahead of time and stored in the refrigerator for a few days. This is a great way to use up any excess eggnog you have from holiday parties. The eggnog is easy to make. It will take about 5 minutes to make.

    Crème Anglaise Sauce

    The cream sauce for this eggnog chaffle is easy to make too. Simply combine the ingredients in a small bowl and whip up until it’s thick and creamy. The rum extract adds that authentic flavor to the eggnog chaffles.

    Storage information

    If you want to make up a bunch of eggnog chaffle ahead of time for Christmas morning, you can meal prep them because they can be frozen. Let the waffles cool completely after they are done cooking. Next, flash freeze each chaffle on a plate or pan in the freezer for 30 minutes in order to harden them. Once they are hard, store the chaffles together in a freezer safe storage bag in the freezer.

    To heat from frozen, use a toaster, oven or toaster oven to heat through and crisp up.
