Sweet Potato Spring Onion Paratha is made with whole wheat flour, spring onion, mashed sweet potato along with Indian spices. This paratha turns out to be very soft. You can either make this by mixing all the ingredients along with the flour as I did or you can even stuff the dough with sweet potato filling and make the paratha.

Instead of making same plain paratha, we can make some changes to the regular paratha and make this delicious sweet potato paratha. You can simply have this paratha as such without any side dish as it has spices blended into it. This paratha tastes awesome without any accompaniment. But you can even serve it along with raitha, curd or pickle of your choice. This paratha tastes both sweet and savory, so kids would love this a lot.

Ingredients

  • 1 cup Whole wheat flour/Atta
  • 1/2 cup Sweet Potato/Sarkaraivalli Kizhangu boiled and mashed
  • 1/2 cup Spring Onion Greens finely chopped
  • 1 tsp Kashmiri Red Chili Powder
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Garam Masala Powder
  • 1 tsp Cumin seeds/Jeera
  • 1 tbsp oil
  • salt to taste
  • oil to sprinkle on paratha

Instructions

  1. Boil a medium size sweet potato. Peel the skin and mash it thoroughly without any lumps. In a wide bowl add everything except oil to sprinkle on paratha, mix well, add water little by little and make a soft dough. Let the dough rest for at least half an hour.

  2. After half an hour knead the dough once again. Now make the equal size of 8-9 balls and set aside. Flatten and coat it in flour on both sides. Now using rolling pin, roll the dough to thick sheet than normal roti.

  3. Meanwhile turn on the gas to medium flame and place the griddle to heat. Place the flattened dough on the griddle. After a few seconds, you will notice bubbles on the paratha. In this stage flip paratha and add a tsp of oil on top. Wait for a minute till the other side is cooked. Turn the paratha again and add oil to the other side. Cook paratha on both sides. Repeat the process for the remaining dough balls. Serve sweet potato spring onion paratha with curd and pickle.

Recipe Notes

  • You can even add a tsp of curd to the dough while kneading.
  • Use warm water to knead the dough.
  • Allow the dough to rest for at least half an hour.
  • More you knead, the dough becomes smoother and roti would be softer.
  • Roll roti little thicker than normal roti. If you roll it very thin then it would become crispy. It will not stay soft for a very long time.
  • Instead of cumin seeds, you can even add carom seeds.
