Can I tell you how GOOD this recipe was!!!! My whole family loved it — there were left overs – heated perfectly in the microwave for Eric ( yay for not having to put together lunch the next day)

I love how rustic this recipe looks — looks like something that everyone would sit around the kitchen table to eat with bread

I love how simple it was to make — not the easiest recipe in the world — if you have been tuned into this site for a while none of my recipes are too hard — this one is a 3 out of 10 in difficulty

There are just a lot of steps — but it is soooooo worth it 🙂

You can make this recipe gluten free if you use gluten free pasta – Barilla makes gluten free pasta which is GREAT ( love it ) — it costs about $1 more per box

One item that is not in the ingredient picture is the parsley — I just wanted to give it a little green color 🙂

Chicken Mozzarella Pasta with Sun-Dried Tomatoes Recipe

Ingredients

  • 3 large garlic cloves
  • 4 oz sun dried tomatoes
  • 1 lb chicken breast tenders
  • salt
  • pinch of paprika
  • 1 cup 2% Milk
  • 1 cup mozzarella cheese, shredded
  • 8 oz penne pasta
  • Parsley - to garnish
  • ½ cup reserved cooked pasta water
  • red pepper flakes, to taste
  • salt, to taste

Instructions

  1. Dice up sundried tomatoes
  2. In a large pan - add oil and garlic and sun dried tomatoes --- I would add additional 2 tablespoons of oil if the mixture is dry since you need oil to cook the chicken
  3. While all this is cooking - cook the pasta according to the instructions on the box - remember to take about ½ Cup of the pasta water out before you drain the pasta
  4. Take out the garlic and sundried tomatoes from the pan - place in the small bowl
  5. Add chicken to the pan - season with the salt, pepper, paprika, and red pepper flakes
  6. Cook chicken - once chicken is cooked - add the tomato mixture add milk and cheese
  7. Once that is heated add pasta - heat for another 2 minutes - if the sauce is too thick add some pasta water
  8. Garnish with parsley and serve

    This looks great – thanks for sharing! I can’t wait to make it. However, you mention oil in the directions and it’s in the picture, but not in the ingredients? How much oil am I supposed to start with?

      Depends on you – I start with about 1 Tablespoon — I go for less oil

        There was some oil from the tomatoes (I used oven-dried Romas) but I added a Tablespoon more just to be sure for this evening’s attempt. Nice recipe which we will try again. Thanks!

    I made this tonight! This was by far the best Italian meal I have had, and I have eaten a lot of Italian food! My husband was obsessed with this after just the first bite! I used cherry tomatoes instead of sun dried just because that is what I had on hand! AMAZING!!! I will probably make this once a week!

      I would to it on the stove – I would only worry about drying out the chicken

    Had this recipe tonite, it was delicious! Doubled the recipe as we are big eaters and added mushrooms to the garlic and sun-dried tomatoes and replaced the parsley with fresh basil. Thank you for a great recipe. We will definitely make it again.

    This was very tasty, however I was wondering how you kept the mozzarella from clumping? I used fresh mozzarella and grated it but it was super clumpy.

    Love green touch with parsley but also love zucchini. Cut small zucchini into slices then into quarters and sautéed them with garlic and sun dried tomatoes. Gave us the green and vegetable to balance out the meal. Delicious.
